A dignified small-producer champagne from southern Aube.

Terroir, production method and ripening: The grapes are collected from orchards that grow about 230 meters above sea level on calcareous clay soil. Working in the garden is natural. 70% of the 2018 base wine ferments and matures in steel tanks and 30% in old oak barrels for 9 months. Malolactic fermentation is allowed and 10% reserve wine is added to the wine when mixing. After the second fermentation, the wine matures for 2 years on the lees. In connection with recorking on 04/21, 1 g/l dosage was added to the wine.

Use: As an aperitif or throughout the meal.

Description: Aroma filled with red fruits. The dry taste is sour-fruity and personal and opens up toasty in the glass.
