Sipping white wine made from the trendy southern French grape Picpoul.
Terroir, production method and maturation: The grapes are collected from calcareous clay soil. The certification of the nurseries for organic production is underway. The wine is produced by Pierre Domaine Bridau, located in Montagnac. The grapes are collected in the cool hours of the night and allowed to macerate in the cool. After spontaneous fermentation, the wine matures on lees for 3 months. The wine is bottled early, when the carbon dioxide naturally present in the wine helps the wine to preserve.
Use: As a companion to seafood and fresh salads.
Description: The scent has green herbal notes and grapefruit. The dry taste is light, although lees maturation gives it a bit of width and mouthfeel.
