Rich Blanc de Blancs from the Grand Cru village of Cramant.
Terroir, production method and maturation: The grapes are collected from two vineyards in the village of Cramant. The base wine is vintage 2018 and the 30% reserve wine dates back to 1986. The base wine matures on the lees in oak barrels for 8 months, and is not clarified or filtered. Malolactic fermentation is also allowed. The wine was bottled for a second fermentation in May 2019. After barely two years of lees maturation, the wine was recorked in March 2021 and a 3 g/l dosage was added.
Use: As a companion to refined seafood delicacies.
Description: The scent is intensely citrusy and nutty. The chalky taste is very dry and the mouthfeel, piloted by the acidity, is very specific.
