Rich Blanc de Blancs from the Grand Cru village of Cramant.

Terroir, production method and maturation: The grapes are collected from two vineyards in the village of Cramant. The base wine is vintage 2018 and the 30% reserve wine dates back to 1986. The base wine matures on the lees in oak barrels for 8 months, and is not clarified or filtered. Malolactic fermentation is also allowed. The wine was bottled for a second fermentation in May 2019. After barely two years of lees maturation, the wine was recorked in March 2021 and a 3 g/l dosage was added.

Use: As a companion to refined seafood delicacies.

Description: The scent is intensely citrusy and nutty. The chalky taste is very dry and the mouthfeel, piloted by the acidity, is very specific.

The Dhondt-Grellet champagne estate began in the village of Flavigny near Avize in 1986, when the Belgian-born Éric Dhondt and his Champagne wife Édith Grellet decided to stop selling their grapes to champagne houses and started making wines that express the terroir of the Côte des Blancs themselves. Now the couple's son Adrien, born in 1991, continues to take care of the family orchards and make wines together with his wife Alice.
