With the reserve wine, a very layered and dry Blanc de Blancs.
Terroir, production method and maturation: The grapes are harvested by hand from the Gand Cru villages of Le Mesnil-sur-Oger, Oger, Avize and Cramant. The basic wine ages in steel tanks and matures on the lees for 7 months. The wine batches from the best tanks are selected for the final blend, with reserve wine matured using the solera method in tanks, large 4,500-liter oak barrels, and cement tanks. After the second fermentation, the wine matures in the bottle for 3-4 years before recorking. Dosage 2 g/l.
Use: As an aperitif and at parties.
Description: A restrained toasty and slightly smoky aroma with caramelized lemon as well. The dry taste is balanced and refined in the mousse, the whole is elegant and the aftertaste is chalky.
