Chablis made from grapes from Guy Robin's old vines.
Terroir, production method and maturation: The grapes were collected at the end of September from the vineyards located opposite the Vaillons Premier Cru plot. A gentle squeeze. With the help of wild yeasts, the wine aged in oak barrels without temperature control. After fermentation, the wine was allowed to mature on fines for 10 months.
Usage: Excellent with fish and shellfish dishes such as smoked salmon or mussels. Also try with veal.
Description: The scent is lively, mineral and has citrus aromas. The multidimensional taste is pure and long and has a good acid balance. The light aroma of oak is well integrated and it brings depth to the wine.
