A wine produced with biodynamic principles from old Garnacha vines in high-altitude vineyards.
Terroir, method of production and maturation: The grapes are harvested by hand around the village of Las Rozas de Puerto Real, in the province of Madrid. The 60-70-year-old vineyards are located in the granite mountain range of the Sierra de Gredos at an altitude of 850 meters. Winemaking follows biodynamic principles, but the wine is not certified. The grapes are harvested earlier than average. The wine goes whole bunches in large open oak vats and matures in them for 10 months.
Use: A versatile partner for cold meats and cheeses, stews and meat dishes such as lamb chops. Also try it with tuna.
Description: Smells like violets, balsamic and herbs. Medium-bodied, soft mouthfeel, with balanced acids and a pleasant tannic structure.
