Terroir, production method and maturation: The grapes are hand-picked from 25-45-year-old vines in the 3-hectare vineyard of the village of Lignorelles, which is one of the highest vineyards in the Chablis region. The wine ages in steel tanks and half of the wine matures in oak barrels, some of which are new and some 1-5 years old.

Use: As a companion to veal cut and capers.

Description: The intense aroma has toast and nuttiness . The dry taste is refreshed by citrus acidity, tense and promising.

The first wines produced in the 1960s from the vineyards of the Lavantureux family's village of Lignorelles were appropriately enjoyed among friends and family. After getting their share of the wines, Marine and Gervais Lavantureux started selling some of the farm's wines in classic 132-liter feuillettes barrels to the Auxerre and Paris regions.
