A rich and dignified premier cru wine.

Terroir, production method and maturation: The grapes grow in the Vaillons orchard when the vines are 50-70 years old. The soil of the sanctuary is a layered mixture of white clay and fossilized oyster shells. After hand-harvesting, the wine ferments spontaneously in oak barrels without temperature control. 10% of the barrels are new. After fermentation, the wine was allowed to mature on the lees for a year, and it is not clarified or filtered before bottling.

Use: With lake fish and white wine sauce.

Description: The intense aroma has toastiness, cream and ripe lemon. The dry taste is dense, richly fruity and concentrated in acidity.
