Terroir, production method and maturation: The grapes are collected by hand From the 60-year-old bush vines of a 0.5-hectare orchard near the town of El Real de San Vicente, in the Mentrida area. The shelter is located at an altitude of 900 meters and its soil consists of granite and sand, typical for the area. The wine ferments spontaneously in whole bunches in open oak barrels. The wine matures for 12 months in 900-liter French oak barrels.
Use: With strong meat dishes, such as deer loin.
Description: A dense scent with aromatic flowers and pepperiness. The red fruit flavor has a well-structured structure and a long aftertaste.
