A wonderful Cabernet-Merlot blend that exemplifies the ability of the star producers of modern Spain to make bold but balanced wines.
Terroir, method of production and aging: The grapes used for the wine are picked by hand, and they come from six (seis) vineyards located in the largest desert in Europe, Las Bardenas Reales. The temperature fluctuations between night and day are large, which thickens the skins of the grapes and is thus also clearly visible in the very dark color of the wine. The stems are removed from the bunches, but the grapes are not crushed, so they are allowed to ferment whole, allowing partial carbon dioxide fermentation. Fermentation takes place max. 24°C in wide cement tanks, after which the wine is aged in 225 and 300 liter French, Hungarian and American oak barrels for 10-15 months.
Use: Red meat dishes, especially game and reindeer.
Description: The fresh berry aroma has dark fruits. Like the aroma, the full flavor is tinged with dark berries, to which oak barrel maturation adds spiciness. The mouthfeel is intense and dense, and the tannins carry the wine for a long time.
