Terroir, production method and ripening: The grapes are collected from the Altenberg plot in the village of Kanzem, which rises to an altitude of 250 meters and whose slope varies between 55 and 89°. Palsta is the longest of Europe's steepest nurseries and its soil is iron-rich Devonian slate. The forest growing above the plot protects the vines from the north wind. The wine ferments spontaneously and matures in steel tanks. Residual sugar 46.8 g/l and acids 10.2 g/l.
