Terroir, production method and maturation: The grapes are picked by hand from the Ritsch plot in the Mittelmosel, where the soil is gray slate and quartzite. A characteristic feature of the vineyard is the preservation of freshness, even though the grapes are picked late, because it is the second steepest plot in Europe. The wine is fermented with wild yeasts in big old oak barrels from Mosel. and rests for three months on fines, after which it is filtered once. The wine has not been clarified.
