Aligoté with a rich mouthfeel.

Terroir, production method and maturation: The grapes used for the wine are harvested by hand from an area of ​​1 hectare in the Sur Melin plot in Auxey-Duresses and the Champs Pirettes plot in Morey-Saint-Denis. The vines were planted in 1950 and 1986. The grapes are pressed as whole bunches and the juice is allowed to settle for 1-2 days in a cool place before fermentation. The wine ages in steel tanks using a pied de cuve, after which the wine matures in oak barrels for about 12 months. Malolactic fermentation of wine also takes place in barrels. The wine is not clarified or filtered.

Use: With fried perch fillets and dill mayonnaise.

Description: The youthful scent has citrus, herbal and creaminess. The dry taste is mild, but wide in the mouth. Perceptible acidity carries the wine to a medium-long aftertaste.

The Taupenot-Merme family farm, located in the village of Morey-Saint-Denis, is in extremely good hands with the sisters Romain and Virginie running their family farm in the ninth generation.
