Refined and versatile food wine from Etna: "Enjoy it with whatever food you wish, as long as it is properly cooked."
Terroir, production method and ripening: The grapes are obtained from the northern slopes of Mount Etna. The wine plots are located 600–900 meters above sea level and the temperature differences between day and night are significant. The mineral-rich soil of the area consists of many types of volcanic soil, such as basalt rock, ash and volcanic sand. The vines are between 5 and 50 years old. The grapes were harvested manually in several batches, a good week later than in 2017. After careful selection of the grapes, the wine went into temperature-controlled steel tanks, followed by malolactic fermentation and aging in large French oak barrels. The wine matured for a month in steel tanks and 10–11 months in 1000–3000 liter French oak barrels.
Use: As an accompaniment to pastas, stewed meat dishes, Mediterranean vegetable dishes and medium-ripened cheeses.
Description: The scent has ripe plum, fig and spices. The medium-bodied mouthfeel is pleasantly acidic and soft. A refined taste follows the aroma: plum, cherry, raspberry and a pinch of spiciness.
