An elegant blend of Carricante and local mixed varieties.
Terroir, production method and ripening: The grapes are obtained from the northern slopes of Mount Etna in the area of four different villages. The region's climate is significantly different from the rest of Sicily: hot and dry summers and wet, cold winters are more reminiscent of the climate of northern Italy. The wine plots are located 600–900 meters above sea level and the temperature differences between day and night are significant. In addition, the gentle winds blowing from the Mediterranean Sea lower the temperatures of summer evenings significantly. The mineral-rich soil of the area consists of many types of volcanic soil, such as basalt rock, ash and volcanic sand. The vines are between 5 and 50 years old. Manual harvesting, light pressing and fermentation process in cool, temperature-controlled steel tanks.
Use: Light pastas, fish and light meats.
Description: The fresh scent has flowers and fresh herbs. The wine is medium-acid, dry and tense in the mouth. Chamomile, apricot and light flowers can be distinguished from its multidimensional aroma world.
