Vintage sparkling wine made entirely from red grapes, full of richness.
Terroir, method of production and maturation: Only red varieties, Pinot Noir and Meunier are used as grapes for this vintage sparkling wine. The basic wine is made in steel tanks, where it also undergoes malolactic fermentation, and matures on the lees until January. A very small part (3-4%) of the wine ages in old barrels from the Burgundy region, which increase the complexity and texture of the wine. After the second fermentation in the bottle, the wine matures for 36 months on the lees, and when recorking, a dosage of 8.8g/L is added. After this, the wine is allowed to rest for another 6 months in the farm's cellar.
Use: An excellent food champagne, which, due to its richness, is suitable to be enjoyed even throughout a meal.
Description: The scent is strong and rich, somewhat aromatic and full of red apples. The full flavor is balanced by sharp apple acidity, which signals the wine's long aging potential.
