English sparkling wine from a family producer.
Terroir, Method of Preparation and Aging: A blend of seven different estates from Kent, East and West Sussex and Surrey. The basic wine is made in steel tanks, where it also undergoes malolactic fermentation, and matures on the lees until January. A very small part (2-3%) of the wine ages in old barrels from the Burgundy region, which increase the complexity and texture of the wine. After the second fermentation in the bottle, the wine matures for 18 months on the lees, and when recorking, a dosage of 8.8 g/l is added. The current cuvée is based on 2015, and includes reserve wine from 2013 and 2014.
Use: An excellent aperitif, which is also suitable for appetizers.
Description: The scent is citrusy and you can distinguish a bit of melon, red apples and almonds. Chardonnay, which dominates the blend, gives the wine an elegant roastiness and brings fresh acidity. Pinot grapes bring depth and fullness that expand the palette far.
