Chardonnay from Pouilly-Fuissé, produced with biodynamic methods, from a small plot of land.

Terroir, production method and aging: The vines used for the wine are about 55 years old and grow on a 0.69 hectare plot facing northeast in the Chatenay vineyard. The shelter is located at an altitude of 250 meters in the village of Pouilly-Fuissé, and the vines are planted at a density of 9,000 vines/hectare. The grapes are picked by hand and the wine ferments spontaneously. Malolactic fermentation is allowed. The wine matures in steel tanks and 10-year-old oak barrels for 17 months, and is not clarified or filtered. Sulfur dioxide is added to wine only during bottling, 50mg/l.

Use: Whole fried organic chicken and forest mushroom sauce.

Description: A strong and multidimensional aroma, the intensity of which promises the wine a long development potential. Rich mouthfeel and ripe fruitiness get freshness from very high acidity. Long and refined aftertaste.
