Long-maturing white wine from the top plot.
Terroir, production method and maturation: The grapes are collected from the 80-year-old vines of the Charmes plot, located in the upper parts of Charmes near Perrières. The wine ferments spontaneously in 350-liter oak barrels, where it also matures for 16 months. About 25% of the barrels are new. The wine is bottled without clarification and filtering.
Use: With fried thymus and creamy mashed potatoes.
Description: The intense aroma is ripe fruity, toasty and promising. The dry taste is rich and dense, and the ripe fruitiness and the toastiness of the oak are refreshed by a very noticeable acidity.
