Rich style, but extremely dry and fruity Chardonnay from five different plots.
Terroir, method of production and maturation: The grapes come from the villages of Vertus, Dizy, Épernay, Mardeuil and Pierry from five different parcels whose soil consists of silty and shale clay on a calcareous subsoil. The wine is 80% vintage 2015, and half of it is vinified in steel tanks and half in oak barrels. The wine is not clarified or filtered. Before bottling, 20% reserve wine stored in solera form in oak barrels since 2000 is added to the wine. The whole is allowed to go through a second fermentation and mature for 36 months in cool cellars under a crown cap. Dosage 2 g/l, re-cap on 11/20.
Use: With sophisticated seafood dishes.
Description: Rich aroma with ripe lemon and toastiness. The dry taste is dominated by fruitiness, although noticeable acidity refreshes the full mouthfeel.
