Terroir, production method and ripening: The grapes are obtained from several orchards, most of which are the producer's own and organically managed. Pinot Noir and Meunier are obtained from the Montagne de Reims, the villages of Ludes and Villedommange, and Serzy-et-Prin northwest of Reims. Chardonnay is obtained from southern Vavray-le-Grand, Vitry. The wine is made using the traditional champagne method. The base wine is based on the 2017 vintage. The reserve wine consists of wines from previous vintages and is aged using the solera method. Depending on the vintage, 35-40% reserve wine is used. The wine ages for 48 months on the lees before recorking. Dosage 4 g/l, re-cap on 12/21.
Use: With various tapas, such as seafood croquettes.
Description: The rich aroma is toasty and appley. The taste is dry and creamy, and the mouthfeel is richly vinous and soft.
