The soil of the shelter is limestone and clay and the shelter faces south. The average age of the ropes is over 20 years. The wine ferments spontaneously in 350-liter oak barrels, where it also matures for 14 months. 10% of the barrels are new. The wine is bottled without clarification and filtering.
