Orange wine made with the help of skin contact from a mixed plot.
Terroir, production method and aging: Mit Achtung series wines are, according to Fred, "Slow Wines" because they are made over time, giving attention to the wines. Modern technology aiming for efficiency is not used in the cellar. The grapes are cultivated with biodynamic methods in the south-facing vineyard of Eichelberg. Whole grapes ferment spontaneously in large oak barrels for four weeks at 25°C, after which they are pressed. The wine is allowed to mature in large barrels with lees for 12 months, and then after a small addition of 15mg/l sulfite, on fine lees for 6 months. During bottling, the wine is not clarified or filtered, and no more sulfites are added to it.
Use: For various mushroom dishes or veal Wallenberg.
Description: The aromatic scent has ripe fruit and a hint of pepper. The taste is juicy and spicy, and the phenolicity brings freshness to the wine together with harmonious acidity.
