Mouthwatering and approachable Chablis.

Terroir, method of production and ripening: The grapes are collected from an area covering 18.30 hectares, where the vine planting density is 7300 vines per hectare. The age of the vines varies between 15 and 30 years, and the soil in the orchards is sandy clay and limestone. The average yields are only 14 hl/ha. After a long and slow pressing, the wine ferments spontaneously in steel tanks for up to four months. Malolactic fermentation also takes place without added bacteria. The wine matures on the lees in steel tanks for 11 months before being bottled unfiltered.

Use: As a partner for lake fish.

Description: The lingering aroma has a light apple and a little herbaceousness. The rich mouthfeel is very dry and acidic, but at the same time softly approachable. The taste world typically has citrus and chalkiness.
