A specialty made from ungrafted vines over 150 years old.

Terroir, production method and ripening: The grapes come from two plots in the Calderara Sottana vineyard in the town of Randazzo. The vine aphid phylloxera has never attacked the shelter. The vines are over 150 years old and produce a very small harvest. The wine ferments at 28-30°C. Malolactic fermentation takes place spontaneously in French 225-liter and large oak barrels, where the wine matures for 16 months.

Use: As an accompaniment to intensely flavored meat dishes and matured cheeses.

Description: The fragrance has wild flowers, red fruits and spiciness. The relatively acidic mouthfeel is intense and promising. The concentrated taste is still sophisticatedly elegant and continues for a long time. The wine has an incredibly long maturation potential and it shows its best aspects only after several years of maturation.
