An elegant and refined wine from a high altitude plot.
Terroir, method of production and ripening: The grapes are obtained from vines planted in 1930, 1975 and 1988, which grow on an area of 3.64 hectares in Laguardia. Beneath the top soil consisting of limestone and clay, there is a subsoil consisting of calcareous sandstone, which is difficult for roots to dig into. The area is located at an altitude of 500 meters and is one of the highest plots in Artadi, facing east. The yield is 3000 kg/ha. The grapes are collected by hand in 10 kg boxes and sorted precisely. Before fermentation, the wine is macerated for 24-48 hours in a cool place. Fermentation takes place in open oak vats for 10-12 days. The wine undergoes malolactic fermentation and matures for 10 months in French oak barrels.
Use: With reindeer shake and lingonberry jam.
