Oak-aged Bical from the interesting Bairrada.

Terroir, production method and maturation: The grapes are collected from a vineyard in Ois do Bairro, which is being converted to biodynamic viticulture. The soil is calcareous clay and faces east. The average age of the ropes is 40 years. Whole bunches are pressed slowly and the juice is poured into oak barrels. The wine ferments spontaneously and matures for 8 months in French 500-600 liter oak barrels at a temperature below 20°C without swirling the lees.

Use: With various seafood and fish.

Description: The aroma is characteristic of the variety, with a hint of pear and a little nutty. The taste is sophisticatedly creamy and slightly salty, the acidity is juicy and the whole is mineral.

Filipa Pato & William Wouters are a couple of wine producers from Bairrada, who exude pride and love for history, old vineyards and the local grape varieties of the region. The Pato family has been making wines in Bairrada, Portugal for more than five generations.
