Terroir, production method and maturation: The grapes are picked from the small plots of Bel-Air and Clardy near the village of Courgis. The wine ages spontaneously in oak barrels, where it also matures for a year.

Use: With citrus seafood dishes.

Description: Balanced rich and layered fragrance. The dry taste is supported by lively acidity. Energetic whole and long aftertaste.

Alice and Olivier de Moor, who live in the village of Courgis, 7km southwest of the town of Chablis, know their farm extremely well. Olivier knows all of Courgis like the back of his hand, as the current wine cellar is located on the ground floor of his old home, under his grandparents' apartment.
