A premier cru matured in oak barrels.

Terroir, method of preparation and maturation: The grapes are picked from the premier cru vineyard of Vau de Vey, a plot of 0.8 hectares. The wine ferments spontaneously in a 500-liter oak barrel, where it also matures for a year. After that, the wine is transferred to a steel tank to wait for bottling.

Use: with Fine de Claire oysters.

Description: The rich scent is intense and slightly creamy. The dry taste is broad due to lees maturation and the acidity is very dense.

Alice and Olivier de Moor, who live in the village of Courgis, 7km southwest of the town of Chablis, know their farm extremely well. Olivier knows all of Courgis like the back of his hand, as the current wine cellar is located on the ground floor of his old home, under his grandparents' apartment.
