Cava de Paraje classified sparkling wine for festive moments.
Terroir, production method and ripening: Xarel-lo grapes are picked by hand from a plot of 0.27 ha and Chardonnay from a plot of 0.89 ha. Both plots were planted in 1992 and are located between the towns of Alella and Tiana at an altitude of about 90 meters, facing southeast. The grapes are pressed especially gently, so that only the juice of the first pressing can be separated. Chardonnay goes a second time in usable French oak barrels, where it is also matured for 4 months. Xarel-lo goes in steel tanks. After mixing and bottling, the wine matures on the lees for 36 months. When recorking, no dosage is added to the wine.
Use: To celebrate anniversaries.
Description: The aroma is autolytically toasty, nutty and ripe citrus. The layered taste is refined, supported by noticeable acidity and toasty. The multidimensional aftertaste continues for a long time.
