Ripasso, made in collaboration with Lauri Tähkä, from Mezzane di Sotto, about 15 km north of the opera city of Verona, whose balanced fullness comes from the second fermentation of wine made from partially dried grapes with Amarone skins. Artist's favorite wine of Anna magazine's jury!

Terroir, method of production and maturation: The grapes are hand-harvested from the southwest-facing limestone vineyards of Mezzane di Sotto. The orchards on the north side of Verona produce higher quality grapes due to the warming of the climate, which is why San Cassiano, which produced the wine, has in the 2010s become neighbors with internationally successful wineries such as Zenato, Tedeschi and Montezovo. These houses, which traditionally made their wine in the Valpolicella Classico area near Lake Garda, have sought higher quality soil higher above sea level, as the quality of the grapes in the area is superior. The replanting of vineyards in Valpolicella was banned in 2019, due to which the growing appreciation of the vineyards in the Mezzane region has significantly increased the prices of the vineyards and the grapes obtained from them.

Corvina grapes have been dried for 40 days, when about 20% of their water evaporates. Corvinone and Rondinella ripen by mid-October, when the grapes are crushed and used in steel tanks with dried grapes at 18°C. In January, after malolactic fermentation, the wine was macerated for about 20 days with the skins used in the production of Amarone. The wine matured for 24 months in once-used 225-liter barrique oak barrels, half of which were French and half American. Before bottling, the wine was clarified with bentonite and filtered. Residual sugar 6.4 g/l.

Description: The rich aroma has ripe cherry and fig, as well as smoked meat and coffee. On the palate, the salty minerality supports the refreshing acidity, and the mouthfeel is ripe and soft with tannins. Juicy fruitiness adapts to the aroma world of the fragrance. Long, lingering and rich aftertaste.

The family farm of San Cassiano is located in the Italian province of Veneto in the famous keep of Valpolicella, Mezzane di Sotto. The grandfather of the current owner of the farm, 40-year-old Mirko Sella, Albino Sella, planted the first vines on the farm in 1959.
