Terroir, production method and maturation: The grapes used in the wine come from five vineyards in the Barolo region. The shelters are Cannubi, Cannubi San Lorenzo, Fossati, Liste and San Pietro delle Viole. The wine ages spontaneously for 12 days in concrete tanks. Fermentation starts at 22-25°C, rising to 29-30°C at the end of fermentation. The skins of the grapes are left to ferment with the wine for another 30 days. Malolactic fermentation and maturation in Slavonian 4500 liter oak barrels for 4 years.
Use: As a partner for game dishes and autumnal, mushroom-filled flavors.
