Ripe, fleshy columnar wine from Elvillar.
Terroir, method of production and maturation: The grapes are obtained from vines planted in 1960, which grow on an area of 1.18 hectares in Elvillar de Alava. The soil is dense and deep, with limestone in places. The sanctuary heads west. The yield is 4000 kg/ha. The grapes are collected by hand in 10 kg boxes and sorted precisely. Before fermentation, the wine is macerated for 24-48 hours in a cool place. Fermentation takes place in open oak vats for 10-12 days. The wine undergoes malolactic fermentation and matures for 12 months in French oak barrels.
Use: With reindeer shake and lingonberry jam.
Description: The strong and rich aroma has very ripe fruitiness, like plum. The full flavor is broad and is supported by ripe soft tannins. In the taste, fruitiness is mixed with spiciness, and the whole is pleasant in the mouth.
