Terroir, production method and maturation: The vineyards are located in the villages of Padrena and Sisán, where the soil consists of granite and sand. The vines are about 35 years old. Manual harvesting. After removing the stems, the grapes are gently pressed and the juice is allowed to settle for a while. Spontaneous fermentation in steel tanks and maturation for 3-6 months on the lees.
Use: Crustaceans, raw fish, light fish, asparagus and other fresh vegetable dishes.
