Albariño from the maritime Rias Baixas of northwest Spain from a farm that Wine & Spirit has listed among the world's 100 best wineries.

Terroir, method of production and maturation: The grapes are collected by hand from six different vineyards located in the villages of Padrena and Sisán, where the soil consists of granite and sand. The vines are on average 30 years old, as the nurseries were planted between 1992 and 2001. After removing the stems, the grapes are gently pressed and the juice is allowed to settle for a while. The wine ferments spontaneously in steel tanks at 18-22°C. Part of the wine goes through malolactic fermentation. The wine matures for 6 months on the lees without mixing the lees.

Use: Crustaceans, raw fish, light fish, asparagus and other fresh vegetable dishes.

Description: Fresh fragrance with green apple, lemon and jasmine. Dry mouthfeel and neat acid structure. A long and multidimensional taste with elderflower, grapefruit, grass and lemon.

Active in the village of Meaño, in the Salnés valley, Zarate is known as a pioneer producer of Albariño. The farm, which can be traced back to 1707, revolutionized the production of Rías Baixas' most important grape in the 1950s by introducing winemaking methods that are still used today.
