A very unique wine from Tenerife.
Terroir, production method and maturation: The Valle de la Orotava wine region is located in the northern part of the island of Tenerife. The name of the wine "7 Fuentes" means seven wells and refers to the village of origin of them and the grapes. The grapes are obtained from the Valle de la Orotava, from a total of 25 vineyards, some of which are owned by the producer and some owned by other local growers. The plots are located in different parts of the valley at an altitude of about 250-800 meters. The average age of the vines varies between 10-100 years and the soil is volcanic. Hand-harvested in September-October. The wines from different orchards are vinified separately and mixed only a little before bottling. Alcoholic fermentation takes place at 22-25°C in concrete tanks with the help of wild yeasts, and 10% of the grapes ferment as whole bunches. Malolactic fermentation and maturation takes place in 60% concrete tanks and 40% in French 500-liter oak barrels for 9 months.
Use: With air-dried ham and light meats and poultry. Also try with smoked fish.
Description: The aroma has a lot of red fruit, pepper and smokiness. The dry taste is medium-bodied, the mouthfeel is silky, and the acidity is fresh. The aftertaste lasts a long time.
