Since 1838 the Sherry house of Gutierrez Colosia has been situated in Puerto de Santa Maria in southern Spain’s Cadiz region. Gutierrez Colosia is one of the rare Sherry houses in the area that is still a family run business. Today it is run by Juan Carlos in ways respectful to his father’s heritage. He started working at the sherry house when he was just 20 yo. Also his wife, Carmen, is involved with the family business.
As is traditional for the area, Gutierrez Colosia’s sherries are produced with the “criaderas y soleras” method where wine is run top down from barrel to barrel. The barrels are stacked on top of each other and wine is poured so that each bottling will have old wine, even aged for decades. When bottling happens from the lower barrels, new wine is added from above. In this way the barrels are never empty but wine added at different periods is always ageing.
