The sangiovese of a shelter dug up by a flock of geese.

Terroir, production method and maturation: The grapes are picked by hand from a shale- and limestone-filled vineyard at an altitude of 480 meters, where a flock of 80 geese work. Fermentation and maceration of the wine takes 15 days, after which the wine matures in oak barrels for 24 months.

Use: Bistecca alla with Fiorentina.

Description: Multidimensional aroma with ripe fruit, spiciness and a bit of leather. The strong taste is intense, the tannins are drying but round, and the aftertaste is long.
