An interesting wine produced by old vines from red and white varieties vinified as white wine.

Terroir, production method and ripening: The grapes are collected by hand from limestone orchards located at an altitude of 745-890 meters. One bush vine produces about 1 kg of grapes. Not all white varieties growing in nurseries have yet been identified. The grapes are pressed as whole bunches and 30% of the juice is used. The wine ferments spontaneously in steel tanks.

Use: Whole baked fish in the oven and with caper salad.

Description: The slightly aromatic scent has lemon and flowers. The dry taste is mineral and tense, the mouthfeel is very fresh and the whole is very gastronomic.

The hill town of Siatista in northwestern Greece has been home to vines since the 17th century. According to the books of the monastery of Siatista, the locals produced and traded their wines, along with other trade goods such as sheep's wool and beeswax, to both Venice and Constantinople.
