Recaredo's flagship sparkling wine from the farm's oldest vineyard.
Terroir, Method of Preparation and Aging: The grapes are hand-picked from the 0.97 hectare Turo d'en Mota vineyard, planted in 1940, on very limestone, located in the Alt Penedès. The basic wine ages in oak barrels. The second fermentation takes place in bottles, where the wine matures on the lees under a natural cork for 120 months. Recorking is done by hand and no dosage is added to the wine.
Use: With halibut and a sauce made from caramelized apples.
Description: Expressive aroma with nutty richness and toffee. The dry taste is tinged with sophisticated mousse and noticeable acidity, and the long aftertaste suggestive of caramelized fruits makes the wine very memorable.
