Terroir, production method and maturation: The grapes are collected by hand from the vineyard, whose vines are 60-70 years old and which is located in the sandy and granite mountain area of the Sierra de Gredos at an altitude of 1100 meters. Winemaking follows biodynamic principles, but the wine is not certified. The grapes are harvested earlier than average. The wine goes whole bunches in 14 hectoliter open oak vessels and matures in them for 14 months.
Use: With a long-simmered ragú.
Description: The aromatic scent is dense and layered. Firm, if fine-grained tannins make the structure felt, and together with the red fruitiness, both spiciness and earthiness unfold in the glass.
