Solessence is the farm's signature champagne, which comes from seven different vineyards.
Terroir, production method and maturation: The grapes come from the villages of Pierry, Moussy, Épernay, Madeuil, Dizy, Boursault and Vertus. The soil is mainly shale clay on a calcareous subsoil. The wine is 50% vintage 2016, which matures in steel tanks, oak barrels of different sizes, egg-shaped concrete containers and sandstone amphoras for 10 months. The wine is not clarified or filtered. Before bottling, 50% reserve wine stored in solera form since 2000 in steel tanks and oak barrels is added to the wine. The whole is allowed to go through a second fermentation and mature for 24 months in cool cellars under a crown cap. Dosage 2g/l, re-cap in autumn 2022.
Usage: Delicious as an aperitif, but also a good partner with various appetizers.
Description: The scent is appley and slightly toasty. The taste is very dry, but approachably rich. The high acidity supports the wine's rich taste world for a long time.
