Refined German pinot noir from limestone soil.
Terroir, method of production and maturation: The grapes are harvested by hand in the village of Siebeldingen, where the grapes grow on limestone plots. The grapes are carefully selected, after which their stems are removed and they are allowed to macerate in the cold for 5 days. The wine ages in steel tanks, followed by aging in French and German oak barrels.
Use: With stewed duck legs and beluga lentils.
Description: The scent is red fruit with a hint of flower and spice. Elegantly fine-grained tannins make up the taste, whose fruitiness is in a fine balance with the spiciness and fresh acidity brought by the oak.
