The novelty of the Soliste series, a pure Chardonnay made from grapes from a single vineyard.
Terroir, method of preparation and maturation: The grapes come from the village of Pierry from the Premier Cru plot of Les Tartières - Les Porgeons. The vines were planted according to massale selection in 1985 and 1990. The shelter facing south on the calcareous soil is managed with horse power. The grapes are collected by hand. Accurate and gentle pressing and selection of juice. The basic wine ferments slowly and matures in oak barrels. The basic wine is neither clarified nor filtered. The whole is allowed to go through a second fermentation and mature for 48 months in cool cellars under natural cork. Dosage 3g/l, re-cap in January 2021.
Use: With sole meunière.
Description: The wine is intensely toasty and deep. The layered taste is precise with plenty of acidity, and in addition to the roastiness, it has caramelized lemon and a touch of floweriness.
