A multi-dimensional and rich Chenin Blanc from the north of the Loire.
Terroir, production method and ripening: The grapes are hand-picked from a south-facing vineyard whose soil consists of shale and sandstone. The vines are about 50 years old. The grapes are cooled and pressed slowly. The wine ferments spontaneously without added yeasts in oak barrels. Malolactic fermentation is partially allowed. The wine matures in oak barrels for 12 months.
Use: With fried sea cucumber and creamy sauce.
Description: A rich and promising scent that has both depth and sophistication. The dry taste is rich, although the structure is still youthful, and the wine's fruitiness opens up more with oxygen and age.
