An incredibly balanced and elegant sweet wine.
Terroir, production method and ripening: The grapes are hand-picked from the south-facing slopes of the Chaumen premier cru orchards. The grapes are cooled and pressed slowly. The wine ferments spontaneously with the help of a natural yeast strain in oak barrels. Malolactic fermentation is partially allowed. The wine matures in oak barrels for 12 months. Residual sugar 98 g/l.
Use: As a companion to Crêpes Suzette.
Description: The tantalizing scent has ripe apricot. The taste is sweet, but nicely refreshed and balanced by the noticeable acidity. Oak barrel maturation brings abundance and breadth to the wine's mouthfeel.
