Terroir, production method and ripening: The grapes are collected from a vineyard planted in 1995 in Ditchling. The shelter area is divided into 25 different plots. The base wine is blended from the 2015, 2016 and 2017 vintages. The 2017 wine is aged in steel tanks and the 2015 and 2016 in oak barrels. The wine batches mature on the lees for 11 months in new, 3-year-old Burgundy and 10-year-old Sauvignon Blanc barrels from the Loire Valley. After the second fermentation in the bottle, the wine matures for 24 months on the lees, and when recorking, a dosage of 8 g/l is added.
Use: Excellent food wine.
Description: The aroma is toasty nutty, rich and creamy. The dry taste is complemented by oak, layered and wonderfully long.
