A classic village wine from one of the best producers in Morey-Saint-Denis.
Terroir, production method and maturation: The grapes used for the wine are collected by hand from six different plots in the lower parts of the slope. The shelters are located 249-264 meters above sea level, facing northeast and south. The soil of the plots is slightly stony, but some of the plots also contain limestone. In total, the shelter areas cover 2.9 hectares. Whole bunches ferment spontaneously in steel tanks and the wine matures for 18 months in French oak barrels available for the first, second and third time. The wine is not clarified or filtered before bottling.
Use: As a companion to wild mushroom risotto.
Description: Aromatic scent with dark cherry, flowers and spiciness. The dry taste is medium-bodied but deep in fruitiness, the tannins are finely divided and the whole is very lively.
