Orange wine made with the help of skin contact from Austria's very own Grüner Veltliner.
Terroir, production method and aging: Mit Achtung series wines are, according to Fred, "Slow Wines" because they are made over time, giving attention to the wines. Modern technology aiming for efficiency is not used in the cellar. The grapes are selected and picked by hand. A third of the grapes are pressed and left to extract for 24 hours before pressing and spontaneous fermentation of the juice in oak barrels. A third of the grapes go whole in oak barrels for four weeks. A third of the grapes are put into kvevres, 50% as whole grapes and 50% as whole bunches for six months. The wine is mixed and matures in large oak barrels first on top of all lees for 8 months and then on fine lees for 10 months. The amount of total sulfur dioxide is less than 35mg/l.
Use: As a companion to pumpkin risotto and curries.
Description: The spicy aroma has a pepperiness typical of the variety. The mouthfeel is slightly sticky and rich, but overall the wine is harmonious.
