A round Blanc de Blancs matured in oak barrels.
Terroir, production method and maturation: The grapes are collected from nine different plots in the villages of Cuis and Chouilly. The base wine is vintage 2018 and the 30% reserve wine dates back to 1986. The base wine matures on the lees in oak barrels for 8 months, and is not clarified or filtered. Malolactic fermentation is also allowed. The wine was bottled for the second fermentation in May 2019. After barely two years of lees maturation, the wine was recorked in March 2021 and a 2 g/l dosage was added.
Use: A very versatile and personal champagne.
Description: The aroma is ripe citrus and apple, and toasty. The taste is very dry and the mouthfeel is balanced thanks to the toasty width and noticeable citrus acidity.
