Terroir, production method and aging: The vines used for the wine are on average 35 years old. The wine ages in seven small 15-42 hectoliter steel tanks in warm conditions. Malolactic fermentation and maturation takes place in medium-toasted new French oak barrels. After about 18 months of maturation, the wine is clarified and bottled without filtering.
Usage: As such or with matured cheese.
Description: The scent is filled with aromatic dark plums and vanilla spiciness. The intensely rich taste is winged by silky tannins, and in addition to the fruity freshness, the taste has flowers and cloves brought by the oak. Elegant texture and a very long aftertaste.
